👋 Welcome

Prepare delicious meals safely for your community

Welcome to YenDidii Academy. This training is designed to ensure you succeed as a cook while keeping food safety and guest satisfaction at the center of your operations.

Because you are preparing meals that will be shared with neighbors and families, compliance with Ghana's food hygiene regulations is a requirement for all active hosts.

Training requirements to get certified:

  • Read through each of the 5 syllabus sections sequentially.
  • Mark each section as read using the button at the bottom of the card.
  • Unlock and pass the final multiple-choice assessment.
  • Enter your app account phone number to verify and store your certificate.
🇬🇭 FDA Guidelines

Food Safety & Legal FDA Standards

Ghana's Food and Drugs Authority (FDA) regulates commercial food preparation to protect the community under the Public Health Act 2012 (Act 851).

  • Food Handler Screening: All YenDidii chefs are strongly encouraged to obtain a Food Handler's Certificate from their municipal or metropolitan health office.
  • No Expired Ingredients: Never prepare or list dishes using expired ingredients. Always inspect labels before cooking.
  • Reporting Illness: If you show symptoms of foodborne illnesses, skin infections, or diarrhea, immediately pause listings and seek medical checkups.
  • Potable Water Sourcing: Always use clean, boiled, or sachet water for food preparation and handwashing. Do not use untreated well or borehole water.
🧼 Clean Kitchen

Personal & Kitchen Hygiene

Maintaining high standards of personal and station hygiene prevents cross-contamination and illness.

  • 20-Second Rule: Wash hands with clean soap and warm running water for at least 20 seconds before starting. Repeat after handling raw meat, trash, or money.
  • Chef's Attire: Wear a clean kitchen apron and use a hairnet or scarf to prevent hair from falling into dishes.
  • Knife & Surface Hygiene: Wash knives, bowls, and tables with soap and clean water immediately after cutting or preparing ingredients.
  • No Jewellery: Remove watches, rings, and bracelets before cooking as they trap bacteria. Keep fingernails short and unpolished.
❄️ Danger Zone

Safe Storage & Danger Zone

Bacteria multiply exponentially at room temperature. Proper temperature checks keep food fresh.

  • The Danger Zone (5°C to 60°C): Keep food above 60°C or below 5°C. Never leave cooked rice, stews, or soups at room temperature for more than 2 hours.
  • Reheating: Reheat leftovers thoroughly until steaming hot (above 75°C) before serving. Never reheat a dish more than once.
  • Raw & Cooked Separation: Keep raw meats/poultry on the bottom shelves of the refrigerator to avoid raw juices dripping onto ready-to-eat foods.
  • Cutting Board Separation: Use separate cutting boards (plastic for raw poultry/meats, wood for vegetables) to avoid bacterial transmission.
🤝 Akwaaba Warmth

Hosting Guests & Hospitality

YenDidii hosts are ambassadors of traditional Ghanaian hospitality. Dine-In guests should experience a clean, welcoming environment.

  • The Akwaaba Welcome: Receive guests with a friendly smile, a clean seating space, and a glass of clean water.
  • Allergy Disclosures: Explicitly mention if you use peanuts (groundnuts), seafood, or common dairy allergens in your meals.
  • Spice Levels: Warn guests if your dish is highly spiced. Offer alternatives or keep extra rice/water nearby.
  • Reviews: Encourage eaters to rate your session in the app. Positive reviews help you stand out on the map.
